Cuisine Companion Hainanese Chicken Rice
Serves: 2-3 peoples
Ingredients A
650gm de-skinned chicken thigh/drumsticks/ -deboned if you preferred
2tbs soy sauce
½ tsp white pepper
1tsp salt
Other Ingredients:
5 cloves peeled garlic
20gm peeled fresh ginger
1 onion
2tbs veggie oil
2 tsp sesame oil
Chicken fat/skin – optional, but adding this will enhance your chicken rice aroma and flavour
1 tsp salt
500ml water >>>for step 5
1ltr water >>> for step 7
1ltr water >>> for step 7
2 cups washed & strained white Jasmine rice
1tbs butter
Garnishing ideas (Optional):
1 Tomato - sliced
1 cucumber – sliced
1 stalk – chopped green onion

Ingredients needed
Mix ingredients A together. Then keep aside in fridge.
Washed & strained rice. Keep aside, until needed in final step.
Step 2
cont; Step 2 : Pulse garlic, onion & ginger into tiny pieces.
Step 3 : Add canola oil and sesame oil.
After step 3.
Step 4 : Add chicken fat & skin.
After step 4
Step 5 : Add first 500ml water into bowl
Step 6: Insert inner steamer basket into CC bowl. Place marinated chicken into basket. Steam, P2 for 35minutes.
Step 7: Take out inner basket for a while in order to add more water into the bowl. I don't want to pour water on top of chicken, to avoid chicken lose it's flavour.

cont; Step 7 : Reinstate inner basket into CC bowl. Cook the again for 5min/100degC/SP0.
cont; Step 8 : Reserve 1 2/3 cup of soup to cook rice.
Step 9 (Final) : Place rice into CC bowl and add the reserved 1 2/3 cup chicken soup onto it.
cont; Step 9: Reinstate back the inner basket into CC bowl for final cooking.
Slow cook P3/25 minutes.
